A much-loved freshwater fish with sweet, tender white flesh and a fine bone structure. Ours are raised in clean ecological ponds with no hormones or antibiotics, and harvested at the size where the meat is at its silkiest.

How To Cook
- Pan-fried whole - score lightly, dust with cornstarch and fry until golden and crisp, then serve with a soy and vinegar dip
- Clear soup - simmer whole with ginger, goji berries and white radish for 30 to 40 minutes until the broth turns milky
- Steamed whole - top with shredded ginger and scallion, steam for 12 to 15 minutes, then finish with soy sauce and hot oil
- Braised in soy - fry briefly, then braise with dark soy, sugar, star anise and cooking wine until the sauce glazes
